Recipes: Clarified Butter (casein-free)

Makes 1 pound

  • 1 pound of grass-fed butter (Kerrygold is a good brand)

Instructions

1. Melt the butter in a saucepan on low heat

2. Skim the milk solids (casein) that rise to the top in a foamy mixture

3. Strain the remaining butter through cheesecloth, into a glass container

Note: If you allow the butter to cook longer, the milk solids will turn brown and fall to the bottom.

You can then strain the butter through cheesecloth. This is called ghee.
